This large round 4.2-quart earthenware Dutch oven with matching lid (“cocotte” in French)—which could belong either to Emile Henry’s ‘Vérone’ line of cookware first imported into the U.S. in 1984 or to Williams Sonoma’s later ‘Auberge’ collection of Emile Henry earthenware—is in nearly pristine condition with only three small (< ½ in.), unobtrusive chips along the unglazed inner rim of the lid that are only visible upon inverting the lid (see accompanying photos). This piece looks like it has otherwise barely been used. This item, handcrafted in France from Burgundian clay, boasts superior heat retention, is resistant to sudden temperature changes, and can go directly from freezer to hot oven without cracking. The high-fire glaze used is also stick-free, scratch resistant, dishwasher safe, and easy to clean. The color of the glaze (possibly “Sky,” now discontinued), which would effectively date the item to circa 2008-2012, is a very pale blue verging on periwinkle. The bottom of the piece, left unglazed for greater heat absorption, is where one finds the Emile Henry logo stamped along with the four-digit shape code (55.00) that was specific to this product at the time of its manufacture (though the same number today denotes a somewhat different product). Though this piece may be highly resistant to breakage due to temperature increases (i.e., going from freezer to oven), it does not belong to the manufacturer’s latest line of ceramic products that can be heated directly on the stovetop as if it were cast iron. Hence its use should be limited to baking. Moreover, when the dish is hot from the oven, it should not be placed in direct contact with anything cold, such as cold water or a chilled surface. To avoid breakage, it should be placed on a neutral surface, such as a wooden cutting board, trivet, or hot pad. Finally, thanks to the highly resistant glaze applied by Emile Henry to their stoneware, one can use metal utensils when cooking or serving from it without scratching the surface.
