It appears to be written in the Pullman tradition of African American Chefs. Pullman Porters were the Black men who staffed the luxury first class Pullman cars on the railroads for over a century. After emancipation, African American men and women were hired to work in the kitchens of hotels, on Pullman railroad cars, and in restaurants. “I have made an earnest effort in this book to offer to the cooks working in the commercial or plain houses, suggestions and ways of preparing the ingredients called for, in simple, quick, wholesome styles.
