(still have the occasional dimple or hole though) Fully organic and single source: Picked to order at 10-12 foot heights from a 15 year old Mission Olive tree - never been fertilized and deeply rooted into native Southern California decomposing granite and clay mineral soil. Extremely high quality fruits this year, just beginning to darken to black during last week of October/first week of November, on the smaller side per olive, with strong skins, ~99% pest* free* (*updates made 11/11/24: should be between 11-12lb of olives shipped for a total of >99% pest/blemish free olives ready for processing, oiling, curing, or preserving) shipping may bruise olives on the outer edges of packaging, however please read below if you receive excessive bruising upon delivery IF EXCESSIVE BRUISING RESULTS IN UNDER 10 LBS OF USEABLE OLIVES, PLEASE REACH OUT IMMEDIATELY AND I'LL DO MY BEST TO PROVIDE A SOLUTION THROUGH REPLACEMENT, PARTIAL REFUND, OR FULL REFUND! Can be prepared Castelvetrano style where they are soaked in a lye bath for 12-36 hours prior to water and brine curing depending on desired bitterness. Lye penetrates these sized olives fully within 24 hours - typically reach 2/3 way to the core within 12-18 hours. Also work great prepared in the Mediterranean or Baladi cracked-olive style. Cracked-olive water curing may require 7-10 days of being submerged in water (changed daily) to leach out enough oleuropein. Can be pickled, preserved, canned directly, but a water cure step for the cracked-olive method is ideal for these olives as they lean on the stronger side in taste depending on preference.
